    We did it! I am relieved to say that yesterday, after more than three weeks of testing, we finally have the caramels we were looking for. It was a struggle at times, but we learned a lot in the process and the results speak for themselves.
    It took nearly two dozen test runs before we finally got what we wanted – a caramel with fruity, earthy bourbon notes, and our signature smooth, buttery, melt-in-your-mouth feel.

    I will admit, at the beginning of this Candy Lab I was a little worried about what candy ideas would come rolling in. With Casting for Recovery as our partner, should we expect Fish Oil-Infused Caramels? Fish ’n Chips? As it turns out, we didn’t have a single bad suggestion. The one fishy suggestion - Swedish Fish and Red Kite Caramel - actually sounded pretty good! We may end up trying that one out.
